The Team

Our team includes two Berliners, an Italian whose family grows our premium rice in Veneto, and a Japanese expert with years of experience in top natural sake breweries. With this background, knowledge and craftsmanship, we brew our sake.

The Story Behind

The idea for Reigen was born at Antaiji, a Zen monastery in the mountains of Japan. It’s where Francesco and Sebastian first met. During their time at the monastery, a question began to take shape:
What if the rice from Francesco’s family farm in Italy could be used to brew European sake?

Curiosity turned into a concrete idea — and eventually led them to Terada Honke, a centuries-old sake brewery in Chiba. They spent a season working and learning there, and met Jun, whose passion and expertise became an integral part of the team.

Back in Europe, the project took shape. In 2020, the team began experimenting with its first test batches — supported by Katharina, who has since given Reigen structure and a clear profile.

During the pandemic, Reigen became a reality. With strong backing from our partner NION, we secured a location and funding. The choice: the former Keglerklause in Berlin-Wedding. Today, it’s home to Germany’s first sake brewery.

This is how Reigen came to life: A sake that bridges Japanese brewing tradition with a European identity. Locally made, thoughtfully crafted — with a clear focus on quality, origin, and character.
