Handcrafted and brewed in small batches - without additives, heavy filtration or sulphites. Each bottle is individually numbered.

Made from low-polished Carnaroli rice (90 %).

Cloudy and fizzy - crisp and dry, with delicate pear notes and a round citrus depth. Nigori-style brewed by re-adding some unpressed sake to the pressed one.

Batch of 105 bottles.

Keep in a cool, dark place and serve well chilled. Open carefully - the natural fermentation pressure can allow the gas to escape quickly.
