Handcrafted and brewed in small batches - without additives, heavy filtration or sulphites. Each bottle is individually numbered.

Made from low-polished Carnaroli rice (90 %).

Cloudy and fizzy - fresh, with light fruitiness and a good dose of acidity. Nigori-style brewed by re-adding some unpressed sake to the pressed one.

Batch of 30 bottles - exclusively for Julius.

Keep in a cool and dark place, serve chilled.

As our sake is unpasteurised, it continues to develop in the bottle. For slow development, store in the refrigerator (ideally < 5 °C). This keeps the taste stable for 6-12 months. Even after this, our sake remains enjoyable, usually with a softer, mellow profile.

If you have received our sake by post, leave it to rest in the fridge for a while - it is then ready to drink when chilled.
