Handcrafted and brewed in small batches - without additives, heavy filtration or sulphites. Each batch is slightly different, each bottle is individually numbered.
Made from low-polished Carnaroli rice (90 %) and whole grain Camargue red rice (IGP).
Still - clear and fruit-forward on the nose with a subtle hint of sherry. On the palate apricot, mirabelle plum and a touch of caramel, all held in a precise balance with moderate acidity. Our lightest matured sake so far.Â
Brewed with a portion of red Camargue rice (Le Long Rouge) from the mineral-rich clay soils of the Bouches-du-Rhône in southern France, giving it its nutty nuance and reddish-brown hue.
Aged 9 months, including 3 months of open oxidative maturation in a stainless steel tank.
Batch of 166 bottles.
Keep refrigerated, serve chilled or at room temperature.
As our sake is unpasteurised, it continues to develop in the bottle. For slow development, store in the refrigerator (ideally < 5 °C). This keeps the taste stable for 6-12 months. Even after this, our sake remains enjoyable, usually with a softer, mellow profile.
If you have received our sake by post, leave it to rest in the fridge for a while - it is then ready to drink when chilled.
