Distilled from our sake-kasu - the flavorful rice lees left after sake pressing.
Shochu is a traditional Japanese spirit with roots dating back to the 16th century. Kasu-tori shochu is a special variety made from the fermented sake lees.
This unfiltered (muroka) shochu is handcrafted by Theo Ligthart from the Freimeisterkollektiv in a limited edition of 260 bottles. Using a traditional copper still, it bridges Japanese tradition with local eau-de-vie craftsmanship.
Tropical fruit, floral and cheesy notes meet earthy and citrus nuances. The palate shows roasted tones with hints of banana, creaminess, and dark chocolate - smooth, layered, and quietly complex.
Enjoy it neat, on the rocks, or in cocktails as a light, balanced alternative to gin or rum.
By giving new life to leftover sake lees, we are taking a small but conscious step towards sustainable craftsmanship.
